Success story

Patisserie Lemmens

"The trick is to incorporate all the information into our systems."
Patisserie Peter Lemmens is a household name in Limburg - and far beyond. The flans, cakes, bonbons and sandwiches are made with only the best, natural ingredients, as much as possible from local soil. You won't find an orange tompouce here. But you will find fresh fruit, lots of fresh fruit, the best butter and refined toppings. Lemmens is a traditional company with four branches, two of which have lunchrooms, and 70 employees. Supported by the right cash register, planning and administration systems from Roltex.

"Baker's heritage"

Erik Reintjens started at 16 as a weekend helper in Peter Lemmens' bakery. 'From day one I was sold on this profession. I think it's the best there is. Working with Peter was also very special: I learned so much from him.' When Peter died in 2009, Erik stepped into the business together with Vivianne Lemmens, one of Peter's daughters. Erik: ' The business was still in my heart. I am immensely proud and grateful that we can continue the family business.'

"Exclusive character"

And how. They opened a new branch in Margraten and added chocolate to their delicacies. Erik: 'When we renovated the bakery in Gronsveld in 2011, we were looking for work tables. We ended up at a chocolate shop that was selling all its contents. That gave us the idea! We now employ two chocolatiers. The chocolate products totally fit our exclusive character and our mission: making beautiful products that make people happy!'

"Crowded shop"

Vivianne Lemmens works both in the shops and in the office. Vivianne: 'Roltex cash registers are very easy to use. Everyone can work well with them. Very handy: you can switch between shop assistants in the cash register. Great when the shop is packed.' Vivianne also takes care of the production schedules. The orders are written down in our shops and entered in the cash registers. Our bakery software and central administration are linked to this, allowing us to print the production lists, send invoices and view the administration from one point. This link allows us to extract a lot of valuable information from our records, which we can segment in detail. Does it make sense to open the shop in Scharn on Sundays on Mother's Day? Which products run fast around Easter or Christmas? We can see it at a glance.'

Not yet implemented

'We also have the ability to automate our time recording and staff scheduling,' Vivianne continued. 'We have the systems, but it hasn't been implemented yet. This is because it's quite complex, with different hourly rates for nights and weekends, and because we haven't gotten around to it yet. We are used to a certain way of working.' Erik: 'I have a lot of information in my head now, which is useful, but also dangerous of course. The trick is to incorporate this more and more into our systems. Together with Roltex we will succeed, I have every confidence in that. They have insight into what works for us and are always patiently available to us if we have any questions.'
